Charoli Recipes

1. Aloo mutter in Chironji Gravy

  • 2 bade aloo, ubale hue
  • 1 cup hare matar, kiye hue
  • 1 tukda dalchini, 2 laung, 6 kali mirch, ek star anise, 2 bay leaves
  • 1 spoon jeera, kadhi patta, coriander leaves
  • 1 spoon lal mirch powder, ½ spoon haldi powder
  • 1 bada onion paste banaya hua
  • 1 inch ginger, baarik kata hua
  • 1 tomato bade tukde kaate hue
  • 100 gram chironji, bhigoke paste banaye. 
  • Oil
  • Salt

Ek pan mein ½ chota cup oil ya ghee dale aur garam hone de. Adrak dale aur thodasa bhune. Ab jeera, dalchini, laung, kali mirch, star anise, kadhi patta, tej patta daal ke bhune. Onion paste daal ke bhune jab tak tel chuta nahin padta. Lal mirch powder aur haldi powder dale aur phir tamatar daal ke hilaye. 2 chamach paani dale aur cook hone de. Ab sliced boiled potato aur matar daal ke hilaye aur garam kare taaki masala andar utar jaaye aur phir namak dal ke bhune. Ab paani dale  aur thodasa cook kare. Ab charoli ka paste daal ke dheemi aanch par cook kare. Dhaniya se sajaye. Nimbu ka ras aur garam masala powder chidke. 

2. Charoli or Chironji Thandai Cold Drink

  • 10 gram bhang ke patte bhigo ke paste banaye. Bhang na mile to pudina ka istemal kare. 
  • 50  gram charoli ka paste
  • 10 gram kali mirch ka powder
  • 10 gram khas khas ka paste
  • 2 elaichi ka powder
  • 2-3 kesar 
  • 20 gram kaju ka paste
  • ½ cup gulab pankhudi ko paste banale
  • ½ cup sugar
  • 1 litre doodh
  • Chaandi ka varakh. 

Doodh ko ubale. Ubalne par chini mila ke ghulne de aur doodh thodasa gaadha hone de aur pehle se bhigoya hua kesar mila de. 
Niche utar de. Ab ismein bhang ka paste, charoli ka paste, kali mirch powder, elaichi powder, kaaju ka paste aur gulab ke pankhudi ka paste mila de. 

Glass mein bhar ke upar chandi ke varakh aur kismis ya cherry se sajaye aur fridge mein thanda kare. 
Yeh drink garmiyon mein aap ko bilkul cool cool rakhega.
